Instructions:

  • In a large pot, bring the milk to a boil, stirring occasionally to prevent burning. Once the milk boils, add lemon juice and stir until the milk starts to curdle.
  • Once the milk has fully curdled and the whey separates, switch off the flame and let it cool for a few minutes.
  • Strain the curdled milk through a cheesecloth and rinse it under running water to remove any lemon flavor and to bring down the temperature.
  • Squeeze out any excess water and transfer the chenna to a large mixing bowl.
  • Add powdered sugar, cardamom powder, rose water, and food color (if using) to the mixing bowl and mix well until it becomes a smooth dough-like consistency.
  • Transfer the mixture to a non-stick pan and cook it on low flame until it starts to leave the sides and comes together.
  • Once the mixture starts to come together, turn off the flame and let it cool down.
  • Once cooled, grease your palms with ghee or butter and make small balls from the mixture.
  • Garnish the sandesh balls with chopped pistachios and refrigerate for 30 minutes to an hour before serving.
  • Enjoy the delicious and crumbly Sandesh as a dessert or a snack!
