Recipe for Sandesh
Soft and crumbly sweets made with chenna, sugar, and different flavors such as rose and pistachio.
Ingredients:
- 2 litres of full-fat milk
- 1/4 cup of lemon juice
- 1/2 cup of powdered sugar
- 1/2 tsp of cardamom powder
- 1 tbsp of rose water
- 1/4 cup of chopped pistachios
- Few drops of pink food color (optional)
Instructions:
- In a large pot, bring the milk to a boil, stirring occasionally to prevent burning. Once the milk boils, add lemon juice and stir until the milk starts to curdle.
- Once the milk has fully curdled and the whey separates, switch off the flame and let it cool for a few minutes.
- Strain the curdled milk through a cheesecloth and rinse it under running water to remove any lemon flavor and to bring down the temperature.
- Squeeze out any excess water and transfer the chenna to a large mixing bowl.
- Add powdered sugar, cardamom powder, rose water, and food color (if using) to the mixing bowl and mix well until it becomes a smooth dough-like consistency.
- Transfer the mixture to a non-stick pan and cook it on low flame until it starts to leave the sides and comes together.
- Once the mixture starts to come together, turn off the flame and let it cool down.
- Once cooled, grease your palms with ghee or butter and make small balls from the mixture.
- Garnish the sandesh balls with chopped pistachios and refrigerate for 30 minutes to an hour before serving.
