Sambar Recipe

Ingredients:
- 1 cup toor dal (split pigeon peas)
- 1 onion, chopped
- 2 tomatoes, chopped
- 2-3 garlic cloves, chopped
- 1 inch piece of ginger, grated
- 1 carrot, chopped
- 1 potato, chopped
- 1 drumstick, chopped (optional)
- 1/2 cup chopped beans
- 1/2 cup chopped pumpkin
- 1/2 teaspoon turmeric powder
- 2 tablespoons sambhar powder
- 1/2 teaspoon mustard seeds
- 1/2 teaspoon cumin seeds
- 2 dried red chilies
- A few curry leaves
- 2 tablespoons oil or ghee
- Salt, to taste
- 4 cups water
Instructions:
- Wash and soak the toor dal in water for 30 minutes.
- In a pressure cooker, add the soaked dal, chopped onions, chopped tomatoes, chopped garlic, grated ginger, chopped carrot, chopped potato, chopped drumstick (if using), chopped beans, chopped pumpkin, turmeric powder, sambhar powder, and salt to taste.
- Add 4 cups of water and mix well.
- Close the pressure cooker lid and cook on high heat for 3-4 whistles.
- Once the pressure releases naturally, open the lid and mash the dal with a ladle until smooth.
- Heat oil or ghee in a pan over medium heat.
- Add mustard seeds and let them splutter.
- Add cumin seeds, dried red chilies, and curry leaves. Fry for a few seconds.
- Add the cooked dal and vegetables to the pan. Mix well.
- Adjust the consistency by adding water if needed. Bring the sambhar to a boil.
- Cook for a few minutes until the vegetables are tender.
- Turn off the heat and serve hot with dosa or idli.
