Cham Cham is a traditional Bengali sweet made with chhena, flour, and sugar syrup.

Ingredients:

  • 1 cup chhena (cottage cheese)
  • 1/2 cup all-purpose flour
  • 1/4 cup semolina
  • 1/4 cup milk powder
  • 1/4 cup sugar
  • 1/4 tsp baking powder
  • 1/4 tsp cardamom powder
  • Oil for deep frying
  • For sugar syrup:
  • 1 cup sugar
  • 1/2 cup water
  • 1/4 tsp cardamom powder
  • For garnishing:
  • 1/4 cup chopped pistachios
  • 1/4 cup saffron strands (optional)

Instructions:

  1. In a mixing bowl, mix together the chhena, all-purpose flour, semolina, milk powder, sugar, baking powder, and cardamom powder. Knead the mixture into a smooth dough.
  2. Divide the dough into small equal portions and shape each portion into a cham cham shape.
  3. In a pan, heat oil for deep frying over medium heat.
  4. Gently slide the cham chams into the hot oil and deep fry until golden brown.
  5. Remove the cham chams from the oil and drain on a paper towel.
  6. To make the sugar syrup, In a pan, combine the sugar, water, and cardamom powder. Cook over medium heat until the sugar is dissolved and the syrup reaches a one-string consistency.
  7. Dip the fried cham chams into the sugar syrup and coat well.
  8. Garnish with chopped pistachios and saffron strands (if using).
  9. Let the cham chams cool before serving.
