Recipe for Dal Baati Churma - A popular dish from Rajasthan, made with whole wheat dough balls (baati), served with dal and sweet crumbled wheat (churma).
Ingredients:
For Baati:
- 2 cups whole wheat flour
- 1/2 cup ghee
- 1/2 cup water
- Salt to taste
For Dal:
- 1 cup tuvar dal (split pigeon peas)
- 1 onion, finely chopped
- 1 tomato, finely chopped
- 1 tsp ginger-garlic paste
- 1 tsp cumin seeds
- 1 tsp turmeric powder
- 1 tsp red chilli powder
- 1 tsp coriander powder
- 1 tsp garam masala powder
- 2 tbsp ghee
- Salt to taste
For Churma:
- 1 cup whole wheat flour
- 1/2 cup ghee
- 1/2 cup jaggery, grated
- 1 tsp cardamom powder
Instructions:
- To make the baati, mix the whole wheat flour, salt and ghee together in a bowl. Add water and knead into a stiff dough. Divide the dough into equal portions and roll them into balls.
- Preheat the oven to 350°F (180°C). Grease a baking sheet and place the baatis on it. Bake for 35-40 minutes, or until they are golden brown and cooked through.
- To make the dal, rinse the tuvar dal and soak it in water for 30 minutes. Drain the water and pressure cook the dal with 3 cups of water and salt for 3-4 whistles, or until it is cooked through.
- In a pan, heat ghee and add cumin seeds. Once they splutter, add ginger-garlic paste, onions, and tomatoes. Cook until the onions are translucent and the tomatoes are soft.
- Add turmeric powder, red chilli powder, coriander powder, and garam masala powder. Cook for a minute, then add the cooked dal. Simmer for 5-7 minutes.
- To make the churma, mix whole wheat flour and ghee together in a bowl. Add water and knead into a stiff dough. Divide the dough into small balls and roll them into flat discs.
- Preheat the oven to 350°F (180°C). Grease a baking sheet and place the discs on it. Bake for 15-20 minutes, or until they are golden brown and cooked through.
- Grind the baked discs in a mixer to make a coarse powder. In a pan, heat ghee and add grated jaggery. Cook until the jaggery melts, then add the cardamom powder and the powdered discs. Mix well and cook for 2-3 minutes.
Serve the baatis with dal and churma.
