Instructions:

  1. If you're using frozen sweet corn, thaw it and keep it aside. If you're using fresh sweet corn, boil it in a pan with enough water and salt for about 8-10 mins, until it's cooked and tender.
  2. In a separate pan, heat oil and add mustard seeds, urad dal, chana dal, dried red chilies, and asafoetida. Once the seeds start to crackle, add the sweet corn and sauté for 2-3 minutes.
  3. Add turmeric powder, salt to taste, and grated coconut. Stir well and sauté for another 1-2 minutes.
  4. Garnish with chopped cilantro before serving.
  5. Sweet corn sundal is typically served as a snack or as a side dish to be eaten with rice. It can also be served as a salad.
