  • 2 cups all-purpose flour

  • 6 tbsp vegetable oil
  • 1 cup water
  • 1 cup potatoes, peeled and diced
  • 1 cup peas
  • 1 cup carrots, peeled and diced
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp garam masala
  • Salt and pepper to taste
  • Vegetable oil for frying

  1. In a large mixing bowl, combine the flour, salt, and 6 tablespoons of oil. Mix until the mixture resembles breadcrumbs.
  2. Add the water and mix until the dough comes together. Knead the dough for 5-10 minutes, until it is smooth and elastic. Cover the dough with a damp cloth and set aside.
  3. In a large pan, heat a few tablespoons of oil over medium heat. Add the onions and garlic and cook until the onions are translucent.
  4. Add the potatoes, peas, and carrots to the pan and cook for 5-10 minutes, until the vegetables are tender.
  5. Stir in the cumin, coriander, garam masala, salt, and pepper. Cook for an additional minute.
  6. Remove the pan from the heat and let the filling cool.
  7. Divide the dough into small balls. On a lightly floured surface, roll each ball into a thin circle.
  8. Cut the circles in half to form semicircles.
  9. Place a spoonful of the filling onto one-half of the semicircle. Fold the dough over the filling to form a triangle. Pinch the edges together to seal the samosa.
  10. Heat a few inches of oil in a deep pan or wok. Carefully add the samosas to the hot oil and fry until they are golden brown, about 3-5 minutes.
  11. Remove the samosas from the oil and drain on a paper towel. Serve hot.
