Ingredients:
- 1 cup urad dal (split black lentils)
- 2 cups parboiled rice
- 1 teaspoon fenugreek seeds
- Salt, to taste
Instructions:
- Wash the urad dal and rice in several changes of water until the water runs clear. Soak the dal and rice in separate bowls for at least 4 hours or overnight.
- Drain the dal and rice and transfer them to a blender or food processor. Add 1 cup of water to the dal and blend until smooth. Transfer the dal mixture to a large bowl.
- Grind the rice in the blender or food processor with 1 cup of water until smooth. Add the rice mixture to the bowl with the dal mixture.
- Add the fenugreek seeds and salt to the dal and rice mixture and stir well to combine. Cover the bowl with a kitchen towel and let the mixture ferment in a warm place for 8-12 hours or overnight.
- Heat a nonstick griddle or skillet over medium heat. Pour a ladleful of the dosa batter onto the griddle and spread it in a thin, circular layer. Cook the dosa until the edges start to brown and lift away from the griddle, about 2-3 minutes.
- Flip the dosa over and cook until the other side is browned about 1-2 minutes. Transfer the dosa to a plate and serve hot with your choice of chutney or sambar. Enjoy!
