  1. Wash the urad dal and rice in several changes of water until the water runs clear. Soak the dal and rice in separate bowls for at least 4 hours or overnight.
  2. Drain the dal and rice and transfer them to a blender or food processor. Add 1 cup of water to the dal and blend until smooth. Transfer the dal mixture to a large bowl.
  3. Grind the rice in the blender or food processor with 1 cup of water until smooth. Add the rice mixture to the bowl with the dal mixture.
  4. Add the fenugreek seeds and salt to the dal and rice mixture and stir well to combine. Cover the bowl with a kitchen towel and let the mixture ferment in a warm place for 8-12 hours or overnight.
  5. Heat a nonstick griddle or skillet over medium heat. Pour a ladleful of the dosa batter onto the griddle and spread it in a thin, circular layer. Cook the dosa until the edges start to brown and lift away from the griddle, about 2-3 minutes.
  6. Flip the dosa over and cook until the other side is browned about 1-2 minutes. Transfer the dosa to a plate and serve hot with your choice of chutney or sambar. Enjoy!
