Ras Malai at Home
Ingredients:
- 1 liter of whole milk
- 1/2 cup of sugar
- 1/4 teaspoon of cardamom powder
- 1/4 teaspoon of saffron strands (optional)
- 1/2 cup of heavy cream
- 1/2 cup of powdered milk
- 1/4 cup of all-purpose flour
- 1/4 cup of semolina (sooji)
- Oil for deep frying
- Pistachios or almonds for garnish
Instructions:
- In a pan, heat the milk over medium heat. Once it comes to a boil, reduce the heat and let it simmer for about 20-25 minutes, or until the milk has reduced by half and thickened.
- Add sugar and cardamom powder and stir until the sugar dissolves. Then add saffron strands (if using) and set aside.
- In a separate bowl, mix together the heavy cream, powdered milk, all-purpose flour and semolina.
- Roll the mixture into small balls and flatten them slightly.
- Heat oil in a deep frying pan over medium-high heat.
- Carefully slide the balls into the hot oil and fry until golden brown, about 3-4 minutes.
- Remove the fried balls from the oil and drain them on a paper towel-lined plate.
- Once the fried balls are cool enough to handle, gently squeeze out the excess oil and drop them into the warm, sweetened milk mixture.
- Let the balls sit in the milk mixture for about 15-20 minutes, or until they are fully absorbed and have doubled in size.
- Serve the ras malai chilled, garnished with chopped pistachios or almonds.
Note: You can also add some condensed milk for added richness.
