Lauki Ki Barfi (Bottle Gourd Sweet)
Ingredients:
- 1 cup grated bottle gourd (lauki)
- 1 cup of sugar
- 1/4 cup of ghee
- 1/4 cup of milk
- 1/4 teaspoon of cardamom powder
- 2 tablespoons of slivered almonds and pistachios for garnish
Instructions:
- In a pan, heat the ghee and add the grated bottle gourd. Cook for about 10-15 minutes, or until the gourd is soft and any excess water has evaporated.
- Add the sugar, milk and cardamom powder. Stir until the sugar dissolves and the mixture thickens, about 10-15 minutes.
- Once the mixture thickens and starts to leave the sides of the pan, turn off the heat.
- Grease a plate or tray with ghee and pour the mixture into it. Spread it evenly and flatten it with the back of a spoon.
- Garnish with slivered almonds and pistachios.
- Let the mixture cool for about 20-30 minutes and then cut it into desired shape and size.
- Once it is completely cooled and set, you can enjoy your delicious Lauki Ki Barfi.
Note: You can add some khoya or mawa for added richness. The barfi will have a softer texture if you add mawa or khoya.
