Ras malai is a delicious Indian dessert made with soft, cheese-based dumplings soaked in a creamy, fragrant sauce. Here is a recipe you can use to make Ras malai at home:


Ingredients:


For the dumplings:

  • 2 cups water
  • 2 cups whole milk
  • 1/2 cup heavy cream
  • 1/2 teaspoon lemon juice
  • 4 cups all-purpose flour
  • 1 cup semolina flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt


For the syrup:

  • 4 cups water
  • 4 cups sugar
  • 1 tablespoon cardamom seeds, crushed
  • 1 tablespoon rose water


For the sauce:

  • 2 cups water
  • 2 cups whole milk
  • 1 cup heavy cream
  • 1/4 cup sugar
  • 2 tablespoons rose water

Instructions:

  1. To make the dumplings, bring the water, milk, cream, and lemon juice to a boil in a large pot over medium heat.
  2. In a mixing bowl, combine the all-purpose flour, semolina flour, baking powder, and salt. Slowly add the dry ingredients to the pot, stirring constantly, until a soft dough forms.
  3. Drop spoonfuls of the dough into the pot and cook until the dumplings are light and fluffy, about 10-15 minutes. Remove the dumplings from the pot and drain on a paper towel-lined plate.
  4. To make the syrup, combine the water, sugar, and cardamom seeds in a pot over medium heat. Bring the mixture to a boil and then reduce the heat to low. Add the rose water and simmer for 5 minutes.
  5. To make the sauce, bring the water, milk, cream, sugar, and rose water to a boil in a pot over medium heat. Reduce the heat to low and simmer for 5 minutes.
  6. To assemble the ras malai, place the dumplings in the syrup and allow them to soak for at least 1 hour.
  7. Transfer the dumplings to a serving dish and pour the sauce over them. Garnish with slivered almonds and pistachios if desired. Enjoy!
