  • 4 eggs
  • 1 medium onion, finely chopped
  • 1 medium tomato, finely chopped
  • 1 green chili, finely chopped
  • 1-inch ginger, finely chopped
  • 1 clove garlic, finely chopped
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon cumin powder
  • 1/2 teaspoon coriander powder
  • 1/2 teaspoon garam masala
  • 1 cup water
  • Salt, to taste
  • 2 tablespoons oil
  • 2 tablespoons besan (chickpea flour)
  • Chopped fresh coriander leaves, for garnish

Egg Bhurji Gravy


  1. Beat the eggs in a bowl and set aside.
  2. Heat the oil in a pan over medium heat. Add the onion, tomato, green chili, ginger, and garlic, and sauté until the onions are soft and translucent.
  3. Add the turmeric, cumin, coriander, and garam masala, and sauté for an additional minute.
  4. Pour in the beaten eggs and stir well.
  5. Add the water and bring to a boil. Reduce the heat to low and let the mixture simmer for 5-7 minutes until the eggs are fully cooked.
  6. In a small bowl, mix together the besan and 1/4 cup of water to form a smooth paste.
  7. Stir the besan paste into the egg mixture and cook for an additional 2-3 minutes, until the gravy has thickened.
  8. Garnish with fresh coriander leaves and serve hot. Enjoy!
