Egg Bhurji Gravy

Ingredients:
- 4 eggs
- 1 medium onion, finely chopped
- 1 medium tomato, finely chopped

- 1/2 teaspoon turmeric powder
- 1/2 teaspoon cumin powder
- 1/2 teaspoon coriander powder
- 1/2 teaspoon garam masala
- 1 cup water
- Salt, to taste
- 2 tablespoons oil
- 2 tablespoons besan (chickpea flour)
- Chopped fresh coriander leaves, for garnish
Instructions:
- Beat the eggs in a bowl and set aside.
- Heat the oil in a pan over medium heat. Add the onion, tomato, green chili, ginger, and garlic, and sauté until the onions are soft and translucent.
- Add the turmeric, cumin, coriander, and garam masala, and sauté for an additional minute.
- Pour in the beaten eggs and stir well.
- Add the water and bring to a boil. Reduce the heat to low and let the mixture simmer for 5-7 minutes until the eggs are fully cooked.
- In a small bowl, mix together the besan and 1/4 cup of water to form a smooth paste.
- Stir the besan paste into the egg mixture and cook for an additional 2-3 minutes, until the gravy has thickened.
