Papdi chaat recipe step by step
Papdi Chaat is a popular Indian street food made by topping crisp fried dough wafers (papdi) with a variety of chutneys, yogurt, and vegetables. Here is a step-by-step recipe for making Papdi Chaat:
Ingredients:
- 1 cup all-purpose flour
- 1/2 cup semolina flour
- Salt to taste
- 1/4 cup oil
- Water as needed
- Oil for frying
- 2 cups chickpeas (boiled and drained)
- 1/2 cup tamarind chutney
- 1/2 cup mint chutney
- 1/2 cup yogurt (whisked)
- 2 tbsp chaat masala
- 1/4 cup chopped onion
- 1/4 cup chopped tomato
- 1/4 cup chopped cilantro
Instructions:
- To make the papdi, mix together the all-purpose flour, semolina flour, salt, and oil in a mixing bowl. Add enough water to make a soft dough.
- Knead the dough for about 5 minutes until it becomes smooth and elastic.
- Roll out the dough into small circles, about 1/4 inch thick, and prick them with a fork to prevent puffing up during frying.
- Heat oil in a frying pan over medium heat. Once the oil is hot, gently slide in a few papdis and fry them until they turn golden brown and crisp. Remove with a slotted spoon and drain on paper towels.
- Repeat the process for the remaining papdis.
- To assemble the chaat, place a few papdis on a plate.
- Top the papdis with boiled chickpeas, tamarind chutney, mint chutney, yogurt, chaat masala, chopped onion, tomato, and cilantro.
- Repeat the layering process until you have used all the ingredients.
- Garnish with more chaat masala, yogurt, and cilantro before serving.
Note:
- You can adjust the amount of chutneys and yogurt according to your taste.
- You can also add chopped boiled potatoes or sev (a type of fried noodle) for some crunch.
