Ingredients:

  • 1 cup all-purpose flour
  • 1/2 cup semolina flour
  • Salt to taste
  • 1/4 cup oil
  • Water as needed
  • Oil for frying
  • 2 cups chickpeas (boiled and drained)
  • 1/2 cup tamarind chutney
  • 1/2 cup mint chutney
  • 1/2 cup yogurt (whisked)
  • 2 tbsp chaat masala
  • 1/4 cup chopped onion
  • 1/4 cup chopped tomato
  • 1/4 cup chopped cilantro

Instructions:

  1. To make the papdi, mix together the all-purpose flour, semolina flour, salt, and oil in a mixing bowl. Add enough water to make a soft dough.
  2. Knead the dough for about 5 minutes until it becomes smooth and elastic.
  3. Roll out the dough into small circles, about 1/4 inch thick, and prick them with a fork to prevent puffing up during frying.
  4. Heat oil in a frying pan over medium heat. Once the oil is hot, gently slide in a few papdis and fry them until they turn golden brown and crisp. Remove with a slotted spoon and drain on paper towels.
  5. Repeat the process for the remaining papdis.
  6. To assemble the chaat, place a few papdis on a plate.
  7. Top the papdis with boiled chickpeas, tamarind chutney, mint chutney, yogurt, chaat masala, chopped onion, tomato, and cilantro.
  8. Repeat the layering process until you have used all the ingredients.
  9. Garnish with more chaat masala, yogurt, and cilantro before serving.

Note:

  • You can adjust the amount of chutneys and yogurt according to your taste.
  • You can also add chopped boiled potatoes or sev (a type of fried noodle) for some crunch.
