Baingan Bharta is a traditional Indian dish made with eggplant (also known as aubergine or brinjal) that is roasted and mashed, then cooked with a combination of spices. Here is a recipe that you can use to make Baingan Bharta:


  • 1 large eggplant (aubergine or brinjal)
  • 2 tbsp oil
  • 1 onion, finely chopped
  • 2 cloves of garlic, minced
  • 1 tsp ginger paste or grated ginger
  • 1 tomato, finely chopped
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • 1/2 tsp red chili powder (or to taste)
  • Salt, to taste
  • 2 tbsp fresh cilantro, chopped (optional)

  1. Roast the eggplant over an open flame or under a broiler, turning it occasionally, until the skin is blackened and the eggplant is cooked through. This should take about 15-20 minutes.
  2. Allow the eggplant to cool, then peel off the skin and mash the flesh with a fork or potato masher.
  3. In a pan, heat the oil over medium heat. Once hot, add the chopped onion, minced garlic, and ginger paste (or grated ginger). Sauté until the onion is translucent.
  4. Add the chopped tomatoes, cumin powder, coriander powder, and red chili powder (if using). Cook until the tomatoes become mushy and the oil starts to separate.
  5. Add the mashed eggplant to the pan and mix well with the other ingredients. Simmer on low heat for a few minutes.
  6. Add salt to taste, and stir in chopped cilantro (if using).
  7. Serve hot with chapati, naan, paratha, or rice.
  8. You can also add diced onions and tomatoes and can season with cumin seeds, mustard seeds, and asafoetida for more taste to the dish.
