Chole Bhature recipe 

Chole Bhature is a popular Punjabi dish that consists of chana masala (spicy chickpeas) and bhature (deep-fried leavened bread). Here is a basic Chole Bhature recipe:


Ingredients (for Chole):

  • 1 cup of chickpeas (chana), soaked overnight
  • 2 medium-sized onions, finely chopped
  • 2 tomatoes, finely chopped
  • 2 tbsp ginger-garlic paste
  • 1 tsp cumin seeds
  • 1 tsp red chili powder
  • 1 tsp coriander powder
  • 1 tsp garam masala powder
  • Salt, to taste
  • 2 tbsp oil
  • 2 cups of water

  • 2 cups of all-purpose flour
  • 1/4 tsp sugar
  • 1/4 tsp yeast
  • 1/4 tsp salt
  • 1/4 cup warm milk
  • Oil, for deep-frying

Instructions (for Chole):

  1. Drain the water from the soaked chickpeas and pressure cooks them with enough water for about 4-5 whistles.
  2. In a large pan or kadhai, heat oil and add cumin seeds.
  3. Once the cumin seeds start crackling, add the chopped onions and fry until they turn golden brown.
  4. Add ginger-garlic paste and fry for a few seconds.
  5. Add the chopped tomatoes and cook until they turn mushy.
  6. Add the red chili powder, coriander powder, garam masala powder, and salt to the pan and fry for 1-2 minutes.
  7. Add the cooked chickpeas and enough water to the pan and bring the mixture to a boil.
  8. Reduce the heat and simmer the mixture for about 15-20 minutes, or until the gravy thickens.


Instructions (for Bhature):

  1. In a mixing bowl, add all-purpose flour, sugar, yeast, and salt. Mix well.
  2. Add warm milk to the flour mixture and knead the dough until it becomes smooth and elastic.
  3. Cover the dough and let it sit in a warm place for about 1-2 hours, or until it has doubled in size.
  4. After the dough has risen, knead it again for a few seconds.
  5. Divide the dough into equal portions and roll each portion into a ball.
  6. Flatten the dough ball and roll it out into a circle of about 3-4mm thickness.
  7. Heat oil for deep-frying in a pan or kadhai.
  8. Once the oil is hot, gently slide in the flattened dough and deep-fry it until it turns golden brown and puffy.
  9. Drain the bhature on a paper towel to remove excess oil.

To serve:

  • Place the chole on a plate and top it with some finely chopped onions, green chilies, and coriander leaves.
  • Serve the bhature hot and crispy along with the chole.
