  1. In a large mixing bowl, combine the puffed rice, chopped onions, tomatoes, boiled potatoes, coriander leaves, mint leaves, and raw mango (if using).
  2. In a small mixing bowl, mix together the lime juice, salt, and red chili powder. Pour this mixture over the puffed rice mixture and toss well to combine.
  3. To make the tamarind chutney: In a saucepan, combine the tamarind paste, jaggery, cumin powder, red chili powder, and salt. Cook over medium heat, stirring constantly, until the jaggery dissolves.
  4. Allow the chutney to cool, then add it to the puffed rice mixture, along with the crushed peanuts and sev. Toss everything together well.
  5. Serve immediately, garnished with additional sev and peanuts, if desired.
  6. You could also add some sprouted moong, diced cucumber and finely chopped green chilies to give more texture and taste to the dish. Some other popular ingredients that can be used in this dish are: sev, chutney made from mint, coriander and green chili, and can be garnished with sev and chutney.
