Ingredients:

  • 1 lb okra, washed and sliced

  • 1 tomato, finely chopped
  • 1 tsp ginger-garlic paste
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • 1 tsp red chili powder
  • 1 tsp garam masala powder
  • Salt, to taste
  • 2 tbsp oil

Instructions:

  1. Heat oil in a pan over medium heat. Add the okra and sauté for about 10 minutes, or until it becomes tender. Remove and keep aside.
  2. In the same pan, add the onions and sauté until they are softened.
  3. Add the ginger-garlic paste and sauté for a few seconds.
  4. Add the tomatoes, and sauté until they are softened.
  5. Add the cumin powder, coriander powder, red chili powder, garam masala powder, and salt. Sauté for a few seconds.
  6. Add the sautéed okra and mix well.
  7. Cook for a few more minutes, until the masala, is well coated on the okra.
  8. garnish with coriander leaves and serve hot as a side dish with rice or roti.

Note: Some variations use dry mango powder or lemon juice to give a tangy flavor. Adjust the quantity of red chili powder as per your taste preference.
