Bhindi masala fry

Ingredients:
- 1 lb okra, washed and sliced

- 1 tsp cumin powder
- 1 tsp coriander powder
- 1 tsp red chili powder
- 1 tsp garam masala powder
- Salt, to taste
- 2 tbsp oil
Instructions:
- Heat oil in a pan over medium heat. Add the okra and sauté for about 10 minutes, or until it becomes tender. Remove and keep aside.
- In the same pan, add the onions and sauté until they are softened.
- Add the ginger-garlic paste and sauté for a few seconds.
- Add the tomatoes, and sauté until they are softened.
- Add the cumin powder, coriander powder, red chili powder, garam masala powder, and salt. Sauté for a few seconds.
- Add the sautéed okra and mix well.
- Cook for a few more minutes, until the masala, is well coated on the okra.
- garnish with coriander leaves and serve hot as a side dish with rice or roti.
Note: Some variations use dry mango powder or lemon juice to give a tangy flavor. Adjust the quantity of red chili powder as per your taste preference.
