  2. In a small bowl, mix together the besan, red chili powder, coriander powder, amchur powder, turmeric powder, and salt. Add water and mix to make a thick paste.
  3. Stuff this mixture into the slits of the okra and keep it aside.
  4. Heat oil in a pan over medium heat. Once hot, add the mustard seeds and cumin seeds. Once they start to crackle, add the stuffed okra and stir gently.
  5. Cover the pan and cook on medium heat for about 15-20 minutes, or until the okra is tender and the stuffing is cooked through. Stir occasionally to prevent burning.
  6. Garnish with chopped cilantro and serve hot with rice or roti.

Note: If you find that the okra is sticking to the pan, you can add a little more oil.
