Instructions:

  1. In a mixing bowl, combine the mashed potatoes, onions, cilantro, cumin powder, red chili powder, and salt. Mix well.
  2. Divide the mixture into 8-10 equal-sized balls and flatten them slightly.
  3. Heat oil in a pan over medium heat.
  4. Once the oil is hot, add the mustard seeds, cumin seeds, dry red chilies and sauté until the seeds start to crackle.
  5. Add the turmeric powder, and fry for a few seconds.
  6. Add the cutlets and fry them until golden brown on both sides, about 2-3 minutes per side.
  7. Add the water, lemon juice, mix well, and bring it to a boil.
  8. Reduce the heat and let the sabzi simmer for about 5-7 minutes.
  9. Serve hot with roti, paratha or rice.

Note: You can add other vegetables like carrots, peas or beans to the mixture for added flavor. You can also add some ginger-garlic paste or coriander powder to the mixture for extra flavor.
