Stuffed Mango Kulfi (Delhi Style)
Ingredients:
- 2 cups of heavy cream
- 1 cup of condensed milk
- 1 cup of mashed ripe mango
- 1 teaspoon of cardamom powder
- 1/4 teaspoon of saffron strands
- 1/4 cup of chopped nuts (such as pistachios, almonds, and cashews)
- 10-12 mango slices (optional)
- 10-12 ice cream sticks or popsicle sticks
Instructions:
- In a mixing bowl, whisk together the heavy cream and condensed milk until well combined.
- Stir in the mashed mango, cardamom powder, saffron strands and chopped nuts. Mix well.
- Pour the mixture into kulfi molds or small paper cups.
- Insert the ice cream sticks or popsicle sticks into the center of the mixture and freeze for about 4-5 hours, or until firm.
- Once frozen, unmold the kulfi and place the mango slices on top (if using)
- Serve the kulfi immediately or store in the freezer for later.
Note: You can use different fruits like strawberry, lychee or mango to make a different flavor of kulfi.
