Ingredients:

  • 2 cups basmati rice
  • 4 eggs
  • 2 tablespoons vegetable oil
  • 1 onion, finely chopped
  • 1 teaspoon cumin seeds
  • 2 cloves garlic, finely chopped
  • 1 teaspoon finely grated ginger
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon chili powder
  • 1 cup water
  • Salt, to taste
  • 1/2 cup frozen peas
  • 2 tablespoons finely chopped fresh cilantro (optional)

Instructions:

  1. Rinse the rice in a fine mesh strainer under cold running water until the water runs clear. Transfer the rice to a medium saucepan and add 2 cups of water. Bring to a boil, then reduce the heat to low, cover, and simmer until the rice is tender and the water has been absorbed about 18-20 minutes.
  2. Meanwhile, hard boil the eggs by placing them in a small saucepan and covering them with cold water. Bring the water to a boil, then reduce the heat to low and simmer for 10-12 minutes. Remove the eggs from the water and let them cool. Once they are cool enough to handle, peel the shells and cut the eggs into quarters or in any shape.
  3. Heat the oil in a large saucepan or wok over medium heat. Add the onion and cumin seeds and cook until the onion is soft and golden about 5-7 minutes. Add the garlic and ginger and cook for another minute.
  4. Add the turmeric, cumin, coriander, and chili powder, and cook for another minute.
  5. Add the water and bring it to a boil. Add the rice and stir to combine. Reduce the heat to low, cover, and simmer for 5-7 minutes.
  6. Stir in the peas and eggs and cook for an additional 2-3 minutes.
  7. Stir in the cilantro, if using. Serve hot.
