Ingredients:
- 2 cups basmati rice
- 4 eggs
- 2 tablespoons vegetable oil
- 1 onion, finely chopped
- 1 teaspoon cumin seeds
- 2 cloves garlic, finely chopped
- 1 teaspoon finely grated ginger
- 1 teaspoon ground turmeric
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon chili powder
- 1 cup water
- Salt, to taste
- 1/2 cup frozen peas
- 2 tablespoons finely chopped fresh cilantro (optional)
Instructions:
- Rinse the rice in a fine mesh strainer under cold running water until the water runs clear. Transfer the rice to a medium saucepan and add 2 cups of water. Bring to a boil, then reduce the heat to low, cover, and simmer until the rice is tender and the water has been absorbed about 18-20 minutes.
- Meanwhile, hard boil the eggs by placing them in a small saucepan and covering them with cold water. Bring the water to a boil, then reduce the heat to low and simmer for 10-12 minutes. Remove the eggs from the water and let them cool. Once they are cool enough to handle, peel the shells and cut the eggs into quarters or in any shape.
- Heat the oil in a large saucepan or wok over medium heat. Add the onion and cumin seeds and cook until the onion is soft and golden about 5-7 minutes. Add the garlic and ginger and cook for another minute.
- Add the turmeric, cumin, coriander, and chili powder, and cook for another minute.
- Add the water and bring it to a boil. Add the rice and stir to combine. Reduce the heat to low, cover, and simmer for 5-7 minutes.
- Stir in the peas and eggs and cook for an additional 2-3 minutes.
- Stir in the cilantro, if using. Serve hot.
