Recipe for Paneer Kulcha

Ingredients:
- 2 cups all-purpose flour
- 1/2 cup warm milk
- 1/4 cup yogurt
- 1 tsp sugar
- 1 tsp salt
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 cup oil
- 1 cup crumbled paneer
- 1/2 tsp cumin seeds
- 1/2 tsp coriander powder
- 1/4 tsp turmeric powder
- 1/4 tsp red chili powder
- 1/4 cup chopped coriander leaves
- Salt to taste
- Ghee or butter for cooking
Instructions:
- In a mixing bowl, add flour, sugar, salt, baking powder, baking soda, and oil. Mix well.
- Add yogurt and warm milk to the mixture and knead into a soft dough.
- Cover the dough and let it rest for 30 minutes.
- In a separate bowl, mix crumbled paneer, cumin seeds, coriander powder, turmeric powder, red chili powder, coriander leaves, and salt. Mix well.
- Divide the dough into equal portions and make balls.
- Roll each ball into a small circle.
- Add a spoonful of the paneer mixture on one side of the circle.
- Fold the other side of the circle over the filling and seal the edges by pressing with your fingers.
- Roll the filled dough ball gently to form a flatbread.
- Heat a griddle or tawa over medium heat.
- Place the kulcha on the tawa and cook until bubbles appear on the surface.
- Flip and cook the other side until golden brown.
- Apply ghee or butter on top of the kulcha and serve hot with chutney or curry of your choice.
