Masala Khichdi or Vegetable Khichdi recipe
Masala Khichdi, also known as Vegetable Khichdi, is a popular dish in Indian cuisine made with rice and lentils, along with a variety of vegetables. Here is a simple recipe for making Masala Khichdi:
Ingredients:
- 1 cup rice
- 1/2 cup moong dal (split green gram)
- 1 cup mixed vegetables (such as carrots, peas, potatoes, bell peppers, etc.)
- 1 tsp cumin seeds
- 1 tsp ginger-garlic paste
- 1 tsp turmeric powder
- 1 tsp red chili powder
- Salt, to taste
- 2 tbsp ghee or oil
- 2 cups water
- Chopped cilantro, for garnish
Instructions:
- Rinse the rice and dal together in a fine mesh strainer under running water, until the water runs clear.
- Heat ghee or oil in a pressure cooker over medium heat.
- Add cumin seeds and let them crackle.
- Add ginger-garlic paste and sauté for a minute.
- Add mixed vegetables and sauté for 2-3 minutes.
- Add turmeric powder, red chili powder, and salt. Mix well.
- Add the rinsed rice and dal, and mix well.
- Add 2 cups of water and give it a good stir.
- Close the pressure cooker and cook for 2 whistles on medium flame.
- Let the pressure release naturally.
- Serve hot and garnish with chopped cilantro.
You can also add or reduce the vegetables as per your preference and you can also use any other lentils like Toor dal, chana dal etc. This dish can also be made in a pot on stove top by following the similar steps and adjusting the water and cook time accordingly.
