Instructions:

  1. Line a colander or sieve with a cheesecloth or muslin cloth. Place the colander over a bowl and pour the yogurt into it
  2. Tie the corners of the cloth together to form a bundle and hang it over the bowl. Allow the yogurt to drain for at least 2-3 hours, or until it reaches the desired consistency.
  3. In a small bowl, soak the saffron strands in 1 tablespoon of warm milk (if using)
  4. In a large mixing bowl, add the strained yogurt and powdered sugar. Mix well until the sugar is completely dissolved.
  5. Add the saffron milk and cardamom powder to the yogurt mixture and mix well.
  6. Transfer the mixture to a serving bowl and garnish with chopped pistachios.
  7. Refrigerate the Shrikhand for at least 1 hour before serving to allow the flavors to meld together.
