Shrikhand Recipe
Shrikhand is a popular sweet dessert made with strained yogurt, sugar, and various flavorings such as saffron, cardamom, and nuts. It is a traditional dessert from the Western Indian states of Gujarat and Maharashtra.
Ingredients:
- 2 cups plain yogurt
- 1/2 cup powdered sugar
- 1/4 tsp cardamom powder
- 1/4 tsp saffron strands (optional)
- 1/4 cup chopped pistachios (for garnish)
Instructions:
- Line a colander or sieve with a cheesecloth or muslin cloth. Place the colander over a bowl and pour the yogurt into it
- Tie the corners of the cloth together to form a bundle and hang it over the bowl. Allow the yogurt to drain for at least 2-3 hours, or until it reaches the desired consistency.
- In a small bowl, soak the saffron strands in 1 tablespoon of warm milk (if using)
- In a large mixing bowl, add the strained yogurt and powdered sugar. Mix well until the sugar is completely dissolved.
- Add the saffron milk and cardamom powder to the yogurt mixture and mix well.
- Transfer the mixture to a serving bowl and garnish with chopped pistachios.
- Refrigerate the Shrikhand for at least 1 hour before serving to allow the flavors to meld together.
