Instructions:

  1. Rinse the toor dal in a colander and add it to a pot with 3 cups of water. Bring to a boil and then reduce heat to low and let it simmer for 20-25 minutes or until the dal is cooked.
  2. In a separate pan, dry roast the grated coconut until it turns golden brown. Grind it to a fine paste and keep it aside.
  3. In a separate pan, heat oil and add mustard seeds, cumin seeds, and dried red chilies. Once the seeds start to crackle, add the chopped onion and sauté until golden brown.
  4. Add minced garlic, grated ginger, and curry leaves and sauté for a minute.
  5. Add chopped vegetables, tomato, sambar powder, turmeric powder and salt to taste. sauté for 2-3 minutes or until the vegetables are cooked.
  6. Add the cooked dal to the mixture and stir well. Bring to a boil and let it simmer for 15 minutes.
  7. Now add the ground coconut paste to the sambar and stir well.
  8. Season with salt to taste and garnish with chopped cilantro before serving.
  9. Serve the Varutharacha sambar with rice or any type of Indian bread.
