Recipe for rice kheer or Rice Kheer

Kheer, also known as rice kheer, is a popular Indian sweet pudding made from rice, milk, sugar, and various aromatic spices. It is a traditional dessert that is served at festivals, religious occasions and also at weddings. Here is a Recipe for rice kheer:


Ingredients:

  • 1/2 cup basmati rice
  • 4 cups whole milk
  • 1/2 cup sugar
  • 1 teaspoon cardamom powder
  • 1 tablespoon slivered almonds
  • 1 tablespoon raisins
  • 1 teaspoon ghee

Instructions:

  1. Rinse the rice in water several times until the water runs clear. Soak the rice in water for 30 minutes.
  2. Drain the water and add the soaked rice to a pot with 4 cups of milk. Bring to a boil over medium-high heat.
  3. Reduce the heat to low and simmer, stirring occasionally, for about 30 minutes or until the rice is tender and the milk has thickened.
  4. Add sugar, cardamom powder, slivered almonds and raisins to the pot and mix well. Cook for an additional 5-7 minutes until the sugar is fully dissolved and the kheer has thickened.
  5. Remove from heat and stir in ghee.
  6. Allow the kheer to cool for a few minutes before serving.

Note: You can also add some saffron or rose water for added flavor.
