Lauki Kofta Recipe
Ingredients:
- 2 cups of grated lauki (bottle gourd)
- 1/2 cup of grated paneer (cottage cheese)
- 1/4 cup of finely chopped onions
- 1/4 cup of finely chopped cilantro
- 1/4 teaspoon of cumin powder
- 1/4 teaspoon of red chili powder
- Salt to taste
- 1/2 cup of all-purpose flour
- Oil for frying
For the gravy:
- 2 cups of finely chopped tomatoes
- 1/4 cup of finely chopped onions
- 1/4 cup of finely chopped ginger
- 2-3 cloves of garlic
- 1/4 teaspoon of cumin powder
- 1/4 teaspoon of red chili powder
- Salt to taste
- 1/4 cup of cream
Instructions:
- In a mixing bowl, combine the grated lauki, grated paneer, onions, cilantro, cumin powder, red chili powder, and salt. Mix well.
- Divide the mixture into 8-10 equal-sized balls and flatten them slightly.
- Place the flour in a shallow dish. Roll the koftas in the flour to coat them evenly.
- Heat oil in a pan over medium-high heat. Carefully place the koftas in the hot oil and fry until golden brown and crispy, about 3-4 minutes on each side.
- Drain on paper towel-lined plate.
- To make the gravy, heat oil in a pan and add cumin seeds. Once the cumin seeds start crackling, add the finely chopped onions, ginger, garlic, and sauté till onions turn translucent.
- Add the finely chopped tomatoes, cumin powder, red chili powder, and salt. Cook till the tomatoes turn mushy.
- Add the cream and mix well.
- Add the fried koftas to the gravy and let it simmer for a minute or two.
- Serve hot with rice or roti.
Note: You can add some cashews paste or poppy seeds paste to the gravy for added flavor and richness.
