Ragda pattice Recipe
Ragda pattice is a popular street food dish from India, typically made from dried white peas that are cooked and then spiced. It is often served as a topping for various Indian chaat dishes such as Pani Puri and Dahi Puri.
To make Ragda, you will need the following ingredients:
- 1 cup of dried white peas (soaked overnight)
- 2 cups of water
- 1 tsp of salt
- 1 tsp of turmeric powder
- 1 tsp of red chili powder
- 1 tsp of cumin powder
- 1 tsp of coriander powder
- 1 tsp of amchur powder
- 1/4 cup of oil
- 1 tsp of cumin seeds
- 1 tsp of mustard seeds
- 2 tbsp of finely chopped ginger
- 2 tbsp of finely chopped green chili
- 1/4 cup of finely chopped cilantro
Instructions:
- In a pressure cooker, add the soaked white peas, water, salt, and turmeric powder, and cook until the peas are soft and tender.
- Once the pressure releases, remove the lid of the cooker and mash the peas slightly.
- In a pan, heat oil over medium heat. Add cumin seeds and mustard seeds and let them crackle.
- Add ginger and green chili, and sauté for a minute.
- Add the cooked peas, red chili powder, cumin powder, coriander powder, and amchur powder and mix well.
- Cook for 2-3 minutes or until the spices are well combined.
- Lastly, add the chopped cilantro and give it a good mix.
- Serve the Ragda as a topping for chaat dishes or enjoy it as a side dish with poori or paratha.
Note: You can also use canned white peas to make this recipe, just skip the soaking and pressure cooking steps.
