Sooji Ka Halwa (Semolina Pudding)


  • 1 cup of fine semolina (sooji)
  • 2 cups of water
  • 2 cups of whole milk
  • 1 cup of sugar
  • 1/4 cup of ghee
  • 1 teaspoon of cardamom powder
  • 2 tablespoons of chopped almonds and cashews (optional)
  • 2 tablespoons of raisins (optional)

Sooji Ka Halwa (Semolina Pudding) 2023


  1. In a pan, heat the ghee and add the semolina. Roast the semolina over medium heat for about 5-7 minutes or until it turns golden brown, stirring continuously to prevent burning.
  2. In a separate pan, bring the water and milk to a boil.
  3. Add the sugar and cardamom powder to the boiling liquid and stir until the sugar dissolves.
  4. Slowly add the roasted semolina to the boiling liquid, stirring constantly to prevent lumps from forming.
  5. Keep stirring and cook until the mixture thickens, about 10-15 minutes.
  6. Stir in the chopped nuts and raisins (if using) and cook for a few more minutes.
  7. Serve hot and garnish with more chopped nuts and raisins, if desired.

Note: You can also add some saffron or vanilla extract for extra flavor. To make it even richer you can add some condensed milk or khoya before serving.
