Ingredients:

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. Cook the lasagna noodles according to the package instructions until al dente. Drain and set aside.
  3. In a large skillet, heat the olive oil over medium heat. Add the onions and garlic and cook until softened, about 5 minutes.
  4. Add the mushrooms and cook until browned, about 8 minutes.
  5. Add the spinach and cook until wilted, about 2 minutes. Season with salt and pepper, to taste.
  6. Spread 1 cup of marinara sauce on the bottom of a 9x13 inch baking dish.
  7. Layer 3-4 lasagna noodles on top of the sauce, followed by a layer of the mushroom and spinach mixture, and a layer of ricotta cheese.
  8. Repeat the layers until all the ingredients are used up, ending with a layer of marinara sauce.
  9. Sprinkle the mozzarella and Parmesan cheese on top of the lasagna.
  10. Cover the baking dish with foil and bake for 25 minutes.
  11. Remove the foil and bake for an additional 15-20 minutes, or until the cheese is golden brown and bubbly.
  12. Remove the lasagna from the oven and let it cool for 10-15 minutes before slicing and serving.

Note: You can use any type of vegetable you like, such as zucchini, eggplant, bell peppers, etc.

Also you can use a meatless meatballs, tempeh or tofu to make it more protein rich.
