Mushroom Biryani
Recipe for Mushroom Biryani - A fragrant rice dish made with mushrooms, spices, and sometimes vegetables.
Ingredients:
- 1 1/2 cups basmati rice
- 2 tablespoons ghee or vegetable oil
- 1 cinnamon stick
- 3 cardamom pods
- 3 cloves
- 1 bay leaf
- 1 large onion, sliced
- 2 teaspoons ginger paste
- 2 teaspoons garlic paste
- 1 green chili pepper, chopped
- 1 cup sliced mushrooms
- 1/2 cup mixed vegetables (optional)
- 2 teaspoons biryani masala
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon cumin powder
- 1/2 teaspoon coriander powder
- Salt to taste
- 2 cups water
- Handful of fresh cilantro leaves, chopped
Instructions:
- Rinse the rice in cold water until the water runs clear. Soak the rice in water for 30 minutes.
- Heat the ghee or oil in a large pot or Dutch oven over medium heat.
- Add the cinnamon stick, cardamom pods, cloves, and bay leaf to the pot and sauté for a minute until fragrant.
- Add the sliced onions and sauté for 5-7 minutes until softened and browned.
- Add the ginger paste, garlic paste, and chopped green chili pepper to the pot and sauté for another minute.
- Add the sliced mushrooms and mixed vegetables (if using) to the pot and sauté for 5-7 minutes until softened.
- Add the biryani masala, turmeric powder, cumin powder, coriander powder, and salt to the pot and mix well.
- Drain the soaked rice and add it to the pot. Mix well and sauté for 2-3 minutes until the rice is well coated with the spices.
- Add 2 cups of water to the pot and mix well. Bring the mixture to a boil.
- Cover the pot with a tight-fitting lid and reduce the heat to low. Cook for 15-20 minutes until the rice is tender and the water has been absorbed.
- Turn off the heat and let the biryani sit for 5 minutes.
- Fluff the rice with a fork and garnish with chopped cilantro leaves.
Serve hot with raita or plain yogurt on the side.
