Khandvi Recipe
Ingredients:
- 1 cup besan (gram flour)
- 1 cup buttermilk
- 1/2 tsp ginger-green chili paste
- 1/4 tsp turmeric powder
- 1/4 tsp mustard seeds
- 1/4 tsp sesame seeds
- 1/4 tsp cumin seeds
- 1/4 tsp sugar
- 1/4 tsp asafoetida
- 2 tbsp oil
- Salt to taste
- Chopped coriander leaves for garnish
Instructions:
- In a mixing bowl, combine the besan, buttermilk, ginger-green chili paste, turmeric powder, and salt. Whisk well to make a smooth batter.
- Heat a pan and pour the batter into it. Cook on medium flame while continuously stirring to avoid lumps. Cook until the mixture thickens and comes away from the sides of the pan.
- Spread the mixture on a greased plate and let it cool for 5 minutes.
- Once cooled, roll the mixture into thin cylindrical rolls.
- Heat oil in a pan and add mustard seeds, sesame seeds, cumin seeds, sugar, and asafoetida. Once the seeds start to splutter, add the rolls and fry for 1-2 minutes on each side.
- Cut the rolls into small pieces and garnish with chopped coriander leaves.
