Recipe for Chana Dal

Ingredients:
- 1 cup chana dal (split Bengal gram)
- 2 cups water
- 1/2 tsp turmeric powder
- 1 tsp salt
- 2 tbsp ghee or oil
- 1 tsp cumin seeds
- 1/2 tsp mustard seeds
- 1/2 tsp fennel seeds
- 2-3 dried red chillies
- 1 medium onion, finely chopped
- 1 tsp ginger paste
- 1 tsp garlic paste
- 2 medium tomatoes, chopped
- 1 tsp coriander powder
- 1/2 tsp cumin powder
- 1/4 tsp garam masala
- 2 tbsp chopped coriander leaves
Instructions:
- Rinse the chana dal in water until the water runs clear.
- In a large saucepan, add the chana dal, water, turmeric powder, and salt. Bring to a boil, then reduce the heat to low and let it simmer for 25-30 minutes or until the dal is cooked and soft.
- In a separate pan, heat the ghee or oil over medium-high heat. Add the cumin seeds, mustard seeds, and fennel seeds. When the seeds start to splutter, add the dried red chillies and fry for a few seconds.
- Add the onions and sauté until they turn translucent.
- Add the ginger and garlic paste and fry for 1-2 minutes until the raw smell disappears.
- Add the chopped tomatoes and cook until they turn soft and mushy.
- Add the coriander powder, cumin powder, and garam masala. Mix well and cook for 1-2 minutes.
- Add the cooked chana dal to the tomato mixture and mix well. If the dal is too thick, add some water to adjust the consistency.
- Let the dal simmer for 5-10 minutes so that the flavors meld together.
- Garnish with chopped coriander leaves and serve hot with rice or Indian bread.
