Instructions:

  1. In a mixing bowl, mash the ripe bananas until smooth.
  2. Add the rice flour, all-purpose flour, grated coconut, sugar, cardamom powder, baking soda, and salt. Mix well.
  3. Slowly add water to the mixture and knead until a smooth batter is formed. The batter should be of flowing consistency.
  4. Heat a non-stick appam pan or a small-medium size non-stick pan with a small well in the middle.
  5. Once the pan is hot, pour a ladleful of batter into the well and rotate the pan so that the batter spreads evenly.
  6. Cover and cook on medium-low heat until the edges start to brown and the appam is cooked through, about 2-3 minutes.
  7. Remove the appam from the pan and repeat with the remaining batter.
  8. Serve the hot Banana Appam with coconut milk or any sweet syrup of your choice.

Note: You can add jaggery instead of sugar, this will give a nice taste and aroma.

Also you can add nuts like cashews or almonds for added crunch.
