Veg Nabe
A hot pot dish made with vegetables, tofu, and sometimes meat or seafood, cooked in a broth. Here's a recipe for Nabe, a Japanese hot pot dish that can be made vegetarian by using vegetables, tofu, and omitting meat or seafood:
Ingredients:
- 6 cups vegetable broth
- 1 tablespoon sake
- 1 tablespoon soy sauce
- 1 tablespoon mirin
- 1 tablespoon sugar
- 1 block of firm tofu, cut into cubes
- 1 cup shiitake mushrooms, sliced
- 1 cup napa cabbage, sliced
- 1 cup bok choy, chopped
- 1 carrot, sliced
- 1 onion, sliced
- 1 package of udon noodles
- Green onions and/or sesame seeds for garnish
Instructions:
- In a large pot, combine the vegetable broth, sake, soy sauce, mirin, and sugar. Bring to a boil over high heat.
- Reduce the heat to low and add the tofu, shiitake mushrooms, napa cabbage, bok choy, carrot, and onion to the pot.
- Simmer the vegetables in the broth for about 10-15 minutes, until they are tender.
- Meanwhile, cook the udon noodles in a separate pot according to the package instructions.
- Serve the hot pot by ladling the vegetables and broth into individual bowls.
- Serve the cooked udon noodles on the side, and add them to the hot pot as desired.
- Garnish each bowl with sliced green onions and/or sesame seeds.

Note: You can also add other vegetables or ingredients such as shirataki noodles, enoki mushrooms, daikon radish, or tofu skin (yuba) to the hot pot.
