 Medu Vada Recipe or Sambar Vada (Uzhunnu Vada)

Ingredients:

  • 1 cup urad dal (split black lentils)
  • 1 tsp cumin seeds
  • 1 tsp salt
  • Oil for deep frying


For Sambar:

  • 1/2 cup toor dal (split pigeon peas)
  • 1/2 tsp mustard seeds
  • 1 tsp cumin seeds
  • 1 tsp urad dal
  • 1 onion, finely chopped
  • 1 tomato, finely chopped
  • 1 tbsp sambar powder
  • Salt to taste
  • 2 cups water

Instructions:

  1. Soak the urad dal in water for 4-5 hours or overnight. Drain the water and grind the dal to a smooth batter using a little water. Add cumin seeds and salt while grinding.
  2. Heat oil in a deep pan for frying.
  3. Take small portions of the batter and shape them into vadas. Gently slide them into the hot oil. Fry until golden brown and crispy. Drain on paper towel.
  4. To make the sambar, pressure cook toor dal with water and a pinch of salt for 3 whistles.
  5. In a separate pan, heat oil and add mustard seeds, cumin seeds, and urad dal. Once they start to splutter, add chopped onion and fry until golden brown.
  6. Add chopped tomatoes, sambar powder and salt. Fry for a few minutes.
  7. Add the cooked toor dal and 2 cups of water. Bring it to boil.
  8. Serve the hot vadas with sambar.
