Mishti Doi
Recipe for Mishti Doi - A sweet and creamy Bengali dessert made with caramelized sugar and yogurt.
Ingredients:
- 1 litre of full-fat milk
- 1/2 cup of sugar
- 2 tablespoons of yogurt
- A few strands of saffron
- 1/4 teaspoon of cardamom powder
Instructions:
- Heat the milk in a heavy-bottomed pan over medium heat, stirring frequently to prevent it from sticking to the bottom of the pan.
- When the milk comes to a boil, reduce the heat and let it simmer for 15-20 minutes, stirring occasionally.
- Add sugar to the milk and stir until it dissolves completely.
- In a small bowl, mix the yogurt with a little bit of milk until it becomes smooth.
- Add the yogurt mixture to the milk and mix well.
- Add saffron strands and cardamom powder to the mixture and stir well.
- Pour the mixture into earthen pots or small serving bowls.
- Place the pots/bowls in a warm place for 6-8 hours to set the yogurt.
- After the yogurt has set, chill it in the refrigerator for a few hours before serving.
- Garnish with a few saffron strands and serve chilled.
