Ingredients:

  • 4 large onions, thinly sliced
  • 4 cloves garlic, minced
  • 4 tablespoons unsalted butter
  • 4 cups beef broth
  • 1 cup red wine
  • 2 teaspoons Worcestershire sauce
  • 2 bay leaves
  • Salt and black pepper, to taste
  • 1 baguette, sliced
  • 2 cups grated Gruyere cheese

Instructions:

  1. In a large pot or Dutch oven, melt the butter over medium heat.
  2. Add the onions and garlic to the pot and sauté until soft and translucent, about 10 minutes.
  3. Reduce the heat to low and continue to cook the onions until caramelized, stirring occasionally, for about 30 minutes.
  4. Add the beef broth, red wine, Worcestershire sauce, and bay leaves to the pot, and stir well.
  5. Bring the soup to a boil, then reduce the heat to low and simmer for 20-25 minutes, until the flavors have melded together.
  6. Season the soup with salt and black pepper to taste.
  7. While the soup is simmering, preheat the oven to 375°F.
  8. Arrange the sliced baguette on a baking sheet and toast in the oven until lightly browned, about 5-7 minutes.
  9. Remove the soup from the heat and discard the bay leaves.
  10. Ladle the soup into oven-safe bowls, filling them about ¾ of the way full.
  11. Place the toasted baguette slices on top of the soup in each bowl, and sprinkle the grated Gruyere cheese on top.
  12. Place the bowls on a baking sheet and broil in the oven until the cheese is melted and bubbly, about 2-3 minutes.

Serve the soup hot, garnished with fresh herbs, if desired.
