Gajar Ka Murabba or Carrot Murabba recipe
Gajar Ka Murabba, also known as Carrot Murabba, is a sweet and tangy preserve made with grated carrots, sugar, and spices.
Ingredients:
- 1 kg grated carrots
- 500 gm sugar
- 1/2 tsp cardamom powder
- 1/2 tsp fennel seeds
- 1/4 tsp nutmeg powder
- 1/4 tsp cinnamon powder
- 1/4 tsp clove powder
- 2-3 tbsp lemon juice
Instructions:
- In a pan, add the grated carrots, sugar, cardamom powder, fennel seeds, nutmeg powder, cinnamon powder, clove powder, and lemon juice.
- Cook the mixture over medium heat until the sugar is dissolved and the carrots are well coated.
- Continue to cook the mixture until it thickens and the liquid has been reduced by about half.
- Remove the pan from heat and let it cool for a few minutes.
- Transfer the mixture to a sterilized glass jar.
- Keep it in a cool place and consume within a month.
