Pineapple Chutney
Recipe for Pineapple Chutney - Made with fresh pineapple, sugar, and spices. A sweet and tangy chutney that is great with Indian flatbreads or as a condiment.
Ingredients:
- 2 cups fresh pineapple, chopped
- 1/2 cup sugar
- 1/2 teaspoon cumin seeds
- 1/2 teaspoon mustard seeds
- 1/2 teaspoon red chili powder
- 1/4 teaspoon turmeric powder
- 1/2 teaspoon salt
- 1 tablespoon oil
- 1 tablespoon lemon juice
Instructions:
- In a pan, heat the oil on medium heat. Once hot, add cumin seeds, mustard seeds, and red chili powder.
- Once the mustard seeds start to pop, add the chopped pineapple, turmeric powder, and salt. Stir well and cook for 2-3 minutes.
- Add sugar and stir well. Cook on medium heat for 10-12 minutes or until the pineapple becomes soft and the sugar has dissolved.
- Remove from heat and let it cool down.
- Transfer the mixture to a blender or food processor and blend until smooth.
- Add lemon juice and mix well.
- Serve as a condiment or with Indian flatbreads. Store any leftover chutney in an airtight container in the refrigerator for up to a week.
