Pineapple Chutney

Recipe for Pineapple Chutney - Made with fresh pineapple, sugar, and spices. A sweet and tangy chutney that is great with Indian flatbreads or as a condiment.

Ingredients:

  • 2 cups fresh pineapple, chopped
  • 1/2 cup sugar
  • 1/2 teaspoon cumin seeds
  • 1/2 teaspoon mustard seeds
  • 1/2 teaspoon red chili powder
  • 1/4 teaspoon turmeric powder
  • 1/2 teaspoon salt
  • 1 tablespoon oil
  • 1 tablespoon lemon juice

Instructions:

  1. In a pan, heat the oil on medium heat. Once hot, add cumin seeds, mustard seeds, and red chili powder.
  2. Once the mustard seeds start to pop, add the chopped pineapple, turmeric powder, and salt. Stir well and cook for 2-3 minutes.
  3. Add sugar and stir well. Cook on medium heat for 10-12 minutes or until the pineapple becomes soft and the sugar has dissolved.
  4. Remove from heat and let it cool down.
  5. Transfer the mixture to a blender or food processor and blend until smooth.
  6. Add lemon juice and mix well.
  7. Serve as a condiment or with Indian flatbreads. Store any leftover chutney in an airtight container in the refrigerator for up to a week.
