Ingredients:
- 4 ears of corn, husked
- 1/4 cup mayonnaise
- 1/4 cup sour cream
- 1/2 cup crumbled cotija cheese (or grated Parmesan)
- 1/2 teaspoon chili powder
- 1/4 teaspoon garlic powder
- 1/4 teaspoon smoked paprika

Instructions:
- Preheat a grill or grill pan over medium-high heat.

- Grill the corn, turning occasionally, until charred in spots and tender, about 8-10 minutes.
- Meanwhile, in a small bowl, whisk together the mayonnaise, sour cream, cotija cheese, chili powder, garlic powder, smoked paprika, salt, and pepper.
- Remove the corn from the grill and let it cool for a few minutes.
- Brush the corn with the mayonnaise mixture, turning to coat all sides.
