Ingredients:

  • 1 cup black chickpeas (kala chana), soaked overnight and pressure cooked

  • 2 dried red chilies

Instructions:

  1. Soak the black chickpeas overnight and then pressure cook them until they are tender.
  2. In a separate pan, heat oil and add cumin seeds, mustard seeds, and dried red chilies. Once the seeds start to crackle, add the chopped onion and sauté until golden brown.
  3. Add minced garlic, grated ginger, and curry leaves and sauté for a minute.
  4. Add grated coconut, cumin powder, coriander powder, turmeric powder, and red chili powder (if using) to the pan and sauté for 2-3 minutes or until the coconut turns light brown.
  5. Add the cooked chickpeas and sauté for 2-3 minutes.
  6. Add 2 cups of water and bring it to a boil, then reduce the heat to low and let it simmer for 15 minutes.
  7. Season with salt to taste and garnish with chopped cilantro before serving.
  8. Serve the Kadala Curry with rice or roti.
