Ingredients:

  • 2 cups boiled and mashed potatoes

  • 1/4 cup tamarind chutney
  • 1/4 cup red chili chutney
  • 1/4 cup finely chopped onion
  • 1/4 cup finely chopped tomatoes
  • 1/4 cup grated coconut
  • 2 tbsp chopped cilantro
  • 2 tbsp pomegranate seeds
  • 2 tbsp crushed roasted peanuts
  • 1 tsp sugar
  • 1 tsp cumin powder
  • Salt to taste
  • Oil for frying
  • 8-10 pav buns

Instructions:

  1. In a large bowl, mix together the mashed potatoes, peanuts, tamarind chutney, red chili chutney, onion, tomatoes, coconut, cilantro, pomegranate seeds, crushed peanuts, sugar, cumin powder, and salt.
  2. Divide the mixture into 8-10 portions and shape each portion into a patty.
  3. Heat oil in a pan over medium heat. Once hot, add the patties and fry for 2-3 minutes per side, or until golden brown.
  4. Cut the pav buns in half and toast them in a toaster or on a griddle.
  5. To assemble the dabeli, spread some tamarind chutney and red chili chutney on the bottom half of the bun.
  6. Place a patty on top and add some finely chopped onion, tomatoes, and grated coconut.
  7. Sprinkle with some cilantro and pomegranate seeds and top with some crushed peanuts.
  8. Close the sandwich with the other half of the bun and enjoy!
  9. You can add more or less chutneys as per your taste. You can also add sev, a fried noodle-like snack, to give a different texture.
