Ingredients:
- 2 cups sliced mushrooms
- 1 onion, chopped
- 1 green bell pepper, chopped
- 2 tomatoes, chopped
- 2 garlic cloves, minced
- 1 inch ginger, grated
- 1-2 green chilies, chopped
- 1 tsp coriander seeds
- 1 tsp cumin seeds
- 1 tsp garam masala
- 1/2 tsp turmeric powder
- 1/2 tsp red chili powder
- Salt to taste
- 2 tbsp oil
- Fresh coriander leaves, chopped for garnish
Instructions:
- Heat a pan and dry roast coriander seeds and cumin seeds for 1-2 minutes or until fragrant. Allow it to cool and then grind into a powder.
- In a pan, heat oil and sauté onions until they turn translucent.
- Add ginger, garlic, and green chilies and sauté for another minute.
- Add chopped tomatoes, salt, turmeric powder, red chili powder, and the ground coriander-cumin powder. Cook until the tomatoes are soft and mushy.
- Add sliced mushrooms and mix well. Cover the pan and let it cook for 5-7 minutes.
- Add chopped bell pepper and cook for another 2-3 minutes until the vegetables are cooked through.
- Finally, sprinkle garam masala and mix well.
- Garnish with fresh coriander leaves and serve hot with naan or roti.
