Vegetarian puff pastry recipes
The key to making good vegetarian puff pastry is to keep the dough and fat as cold as possible to prevent the fat from melting and incorporating into the dough. This will help create the flaky layers that are characteristic of puff pastry.
Ingredients:
- 2 cups all-purpose flour
- 1/2 cup unsalted butter, cold and cubed
- 1/2 tsp salt
- 1/2 cup water
- 1 cup mixed vegetables (peas, carrots, potatoes)
- 1/2 cup green peas
- 1/4 cup finely chopped onions
- 1/4 cup finely chopped tomatoes
- 1/4 cup finely chopped cilantro
- 2 green chili, finely chopped
- 1/2 tsp cumin powder
- 1/4 tsp turmeric powder
- Salt to taste
Directions:
- In a mixing bowl, combine flour, butter, and salt. Mix until the mixture resembles coarse crumbs.
- Slowly add water and knead the dough until it comes together.
- Cover the dough with plastic wrap and refrigerate for 30 minutes.
- In a pan, add mixed vegetables, green peas, onions, tomatoes, cilantro, green chili, cumin powder, turmeric powder, and salt. Cook until the vegetables are tender.
- Roll out the dough into thin circles.
- Place a spoonful of the vegetable mixture onto one half of the dough circle.
- Fold the other half of the dough over the filling and press the edges to seal.
- Heat oil in a pan and gently place the puff in the oil.
- Fry until golden brown on both sides.
- Serve hot.
Note: You can also bake the puff in preheated oven at 200-degree celsius for 20-25 minutes or till they puff up and turn golden brown.
