Vegan veggie burger

 Here's a recipe for a simple vegan veggie burger:

Ingredients:

  • 1 cup cooked brown rice
  • 1 cup cooked black beans, mashed
  • 1/2 cup diced onion
  • 1/2 cup diced bell pepper
  • 1/4 cup breadcrumbs
  • 2 cloves of garlic, minced
  • 2 tbsp chopped cilantro
  • 1 tbsp soy sauce
  • 1 tsp cumin
  • 1/2 tsp salt
  • Oil for frying

Instructions:

  1. In a large bowl, combine the cooked brown rice, mashed black beans, diced onion, diced bell pepper, breadcrumbs, garlic, cilantro, soy sauce, cumin, and salt. Mix well.
  2. Form the mixture into 4-6 patties.
  3. Heat a pan over medium-high heat and add oil. Once hot, add the patties and cook for 3-5 minutes per side, or until they are crispy and golden brown.
  4. Serve on a bun with your favorite toppings such as lettuce, tomato, avocado, and vegan mayo or cheese.
  5. You can also change the rice for quinoa, lentils, chickpeas or even sweet potatoes if you want to give it a different taste.
  6. Also, you can use a grill instead of a pan for a different texture.
