Vegan veggie burger
Here's a recipe for a simple vegan veggie burger:
Ingredients:
- 1 cup cooked brown rice
- 1 cup cooked black beans, mashed
- 1/2 cup diced onion
- 1/2 cup diced bell pepper
- 1/4 cup breadcrumbs
- 2 cloves of garlic, minced
- 2 tbsp chopped cilantro
- 1 tbsp soy sauce
- 1 tsp cumin
- 1/2 tsp salt
- Oil for frying
Instructions:
- In a large bowl, combine the cooked brown rice, mashed black beans, diced onion, diced bell pepper, breadcrumbs, garlic, cilantro, soy sauce, cumin, and salt. Mix well.
- Form the mixture into 4-6 patties.
- Heat a pan over medium-high heat and add oil. Once hot, add the patties and cook for 3-5 minutes per side, or until they are crispy and golden brown.
- Serve on a bun with your favorite toppings such as lettuce, tomato, avocado, and vegan mayo or cheese.
- You can also change the rice for quinoa, lentils, chickpeas or even sweet potatoes if you want to give it a different taste.
- Also, you can use a grill instead of a pan for a different texture.
