Vada pav recipe at home

Vada pav is a popular street food in India, consisting of a spicy potato patty (vada) served in a bun (pav) with various chutneys. Here is a Recipe for vada pav:


Ingredients:

For the vada:

  • 2 cups boiled and mashed potatoes
  • 1/2 cup finely chopped onions
  • 1/4 cup finely chopped cilantro
  • 1 teaspoon mustard seeds
  • 1 teaspoon cumin seeds
  • 1 teaspoon finely chopped green chili peppers
  • Salt to taste
  • Oil for frying


For the pav:

  • 4 small dinner rolls or buns
  • 2 tablespoons butter, melted


For the green chutney:

  • 1 cup packed fresh cilantro leaves
  • 1/2 cup packed fresh mint leaves
  • 2 cloves garlic
  • 1 jalapeño pepper
  • 2 tablespoons lemon juice
  • Salt to taste


For the sweet chutney:

  • 1 cup roughly chopped dates
  • 1/4 cup water
  • 1/4 teaspoon cumin seeds
  • 1/4 teaspoon ground cardamom
  • 1/4 teaspoon ground cloves

Instructions:

  1. To make the vada, combine the mashed potatoes, onions, cilantro, mustard seeds, cumin seeds, green chili peppers, and salt in a bowl. Mix well.
  2. Heat the oil in a large pan over medium heat.
  3. Divide the potato mixture into 8 equal portions and shape each into a patty.
  4. Carefully place the patties in the hot oil and fry until golden brown, about 3 minutes per side. Remove with a slotted spoon and drain on a paper towel-lined plate.
  5. To make the pav, split the buns in half and brush the inside with melted butter. Toast in a pan over medium heat until lightly golden, about 1-2 minutes per side.
  6. To make the green chutney, combine the cilantro, mint, garlic, jalapeño, lemon juice, and salt in a blender or food processor and process until smooth.
  7. To make the sweet chutney, combine the dates, water, cumin seeds, cardamom, and cloves in a saucepan and bring to a boil. Reduce the heat to a simmer and cook until the dates are soft and the mixture has thickened about 10 minutes.
  8. To assemble the vada pav, spread a spoonful of green chutney on the bottom half of each bun. Place a vada on top of the chutney, then drizzle with sweet chutney. Top with the other half of the bun and serve.
