Ingredients:
- 1/2 gallon of whole milk
- 1/4 cup lemon juice
- 1/4 cup water
- 1 cup sugar
- 4 cups water
Instructions:
- In a large pot, bring the milk to a boil over medium heat.
- Add the lemon juice to the milk and stir gently. The milk will begin to curdle.
- When the milk has fully curdled, turn off the heat and let it sit for a few minutes.
- Strain the curds through a cheesecloth-lined colander.
- Tie the cheesecloth into a bundle and hang it over a sink or bowl to drain for 1-2 hours.
- Once the curds have drained, transfer them to a bowl and knead them for 5-7 minutes until they form a smooth dough.
- Divide the dough into small balls about the size of a cherry.
- In a separate pot, bring the water and sugar to a boil to make syrup.
- Add the dough balls to the syrup and reduce the heat to medium-low.
- Simmer the rasgullas for 20-25 minutes, or until they have doubled in size and become spongy.
- Remove the rasgullas from the syrup with a slotted spoon and transfer them to a plate to cool.
- Serve the rasgullas chilled, with the syrup on the side.
