Ingredients:

  • 1/2 gallon of whole milk
  • 1/4 cup lemon juice
  • 1/4 cup water
  • 1 cup sugar
  • 4 cups water

Instructions:

  1. In a large pot, bring the milk to a boil over medium heat.
  2. Add the lemon juice to the milk and stir gently. The milk will begin to curdle.
  3. When the milk has fully curdled, turn off the heat and let it sit for a few minutes.
  4. Strain the curds through a cheesecloth-lined colander.
  5. Tie the cheesecloth into a bundle and hang it over a sink or bowl to drain for 1-2 hours.
  6. Once the curds have drained, transfer them to a bowl and knead them for 5-7 minutes until they form a smooth dough.
  7. Divide the dough into small balls about the size of a cherry.
  8. In a separate pot, bring the water and sugar to a boil to make syrup.
  9. Add the dough balls to the syrup and reduce the heat to medium-low.
  10. Simmer the rasgullas for 20-25 minutes, or until they have doubled in size and become spongy.
  11. Remove the rasgullas from the syrup with a slotted spoon and transfer them to a plate to cool.
  12. Serve the rasgullas chilled, with the syrup on the side.
