Ingredients:

  • 2 cups water
  • 1 cup diced potatoes

  • 3 cloves garlic, minced
  • 2 tbsp butter
  • 1 tsp cumin seeds
  • 2 tbsp pav bhaji masala

  • 2 tbsp chopped cilantro
  • 4 pav buns
  • 1 lemon, cut into wedges



Instructions:

  1. In a large pot, bring the water to a boil and add the potatoes, carrots, peas, bell peppers, tomatoes, and onions. Cook until the vegetables are tender, about 15 minutes.
  2. Using a potato masher or immersion blender, mash the vegetables until they are smooth.
  3. In a separate pan, heat the butter over medium heat and add the cumin seeds. Cook until the cumin seeds are fragrant, about 1 minute.
  4. Add the minced garlic and cook for an additional minute.
  5. Add the mashed vegetables to the pan with the cumin seeds and garlic, and stir in the pav bhaji masala and salt. Cook until the mixture is heated through, about 5 minutes.
