Okra curry Kerala style
Okra Curry, also known as Vendakkai Curry, is a popular dish in the southern Indian state of Kerala. It is made with okra (also known as ladies' fingers or bhindi) that is first lightly sautéed and then simmered in a flavorful coconut-based gravy. Here is a basic recipe for Okra Curry Kerala style:
Ingredients:
- 1 lb okra, washed and sliced
- 1 medium onion, finely chopped
- 1 tomato, finely chopped
- 1 tsp ginger-garlic paste
- 1/2 tsp turmeric powder
- 1 tsp red chili powder
- 1 tsp coriander powder
- Salt, to taste
- 1 cup grated coconut
- 1 tsp mustard seeds
- 1 tsp cumin seeds
- 1 sprig curry leaves
- 2 tbsp oil
Instructions:
- Heat oil in a pan over medium heat. Add the mustard seeds and cumin seeds, and let them crackle.
- Add the curry leaves, and sauté for a few seconds.
- Add the onion and sauté until they are softened.
- Add the ginger-garlic paste and sauté for a few seconds.
- Add the tomato, and sauté until they are softened
- Add the turmeric powder, red chili powder, coriander powder, and salt. Sauté for a few seconds.
- Add the grated coconut, and sauté for a couple of minutes.
- Add the okra and enough water to make gravy.
- Cover and cook for about 15 minutes, or until the okra is tender.
- adjust the seasoning and serve with steamed rice or roti.
Note: In some variations add a pinch of tamarind paste or 1/4 tsp of jaggery which could be added along with tomato and turmeric powder.
