- Add the tomatoes and sauté until they turn soft and mushy.
- Add the cubed pumpkin, cumin powder, coriander powder, red chili powder, turmeric powder, garam masala powder, and salt to taste. Mix well.
- Add 1/4 cup of water, cover, and cook for 5-7 minutes or until the pumpkin is cooked through.
- Garnish with coriander leaves and serve hot with rice or roti.
Note: You can also add some other vegetables like carrots, chow-chow, or drumsticks to make it more nutritious.
